Day 6 -
Day six and our weight loss journey continues. I spent more time at home today so I had less temptations to deal with, but here’s a pro tip – DO NOT got to the grocery store when you are hungry AND dieting. I picked up a bunch of great healthy alternatives for carbs and so far my favorite was cauliflower rice. I know you can easily make this yourself if you have a food processor, but it comes in bags or even in some frozen varieties. I’ll talk more about my cauliflower rice later.
Today was hard to be motivated to go to the YMCA. My legs were really sore from the walking the day before, but I didn’t want to allow myself any excuses. After a quick morning meeting, I came home changed into my workout clothes and got back on the treadmill. I am still using an audiobook to help pass the time during my workout. I used to listen to high-energy music when I ran, to help get me pumped up, but my ankle will absolutely not let me run right now, at least not with all this weight. I am hoping that as I continue to lose weight and exercise that maybe I will be able to strengthen my ankle and I can once again do some running; to be fair my version of running has always been a slow jog but I used to regularly sign up for 5K’s. I managed 25 minutes of walking and then decided my calves and ankles would really appreciate me if I switched to a bicycle for the last 15 minutes of the workout.
For food today; I started my day with coffee, I made myself some egg salad for lunch, I had some raspberries and pecans for a snack, I had an Atkins bars in the late afternoon while I was out, and I came home and made myself some salmon and cauliflower rice for dinner, and I had a cheese stick and some almonds for an evening snack. Once again I was a little hungrier today, which is why I had a few snacks throughout the day.
I absolutely loved the cauliflower rice. Cauliflower has 5g of carbs per cup vs. 46g of carbs for a cup of brown rice. I wasn’t sure how to cook it so I looked online and there are lots of ways to prepare it; microwave, oven, stove. I chose to pan fry about a cup. I used some butter for flavor and a bit of oil to help make sure the butter didn’t burn as quickly. I added some garlic, salt, and pepper. It was so good – it was exactly the carb feeling I was missing. I am now a big fan.
Peter is still doing great on his diet too and he is looking good. We both talked about actually feeling better without sugar, although Peter had me cracking up talking about how he would have killed for a cinnamon roll.
With all of the monsoon storms the mornings are cooler so I am planning to take Lexi on a walk tomorrow morning, just to add some variety to my workouts and because she is really tired of being cooped up in the house. Normally it is way to hot to take a dog on a walk during Phoenix summers, but monsoons cool it off just enough to make it possible.
Good luck with your diet. I know how hard it is when your ankle hurts. I twisted mine a few years ago and it took a long time to completely heal. I'll have to try some cauliflower rice. I love cauliflower. It's supposed to make a great pizza crust.

DeleteI love the cauliflower rice! I am on Paleo diet. I make a shepherd's pie with mashed cauliflower rice instead of mashed potatoes and it is fabulous! I bike daily for exercise. I have sciatic and walking for exercise flares it up but biking only does if I go up steep hills. Good luck on your diet.
