Our Keto Journey - Day 11

Day 11-

Peter and I got up and started our day with a visit to the YMCA. I am super excited to report that I have lost 7 pounds so far since weighing myself on Day 3. That’s right – I have lost one pound per day!  I know that I am able to lose a larger amount right now because I have a lot more to lose than some folks, but I am really happy with my progress so far. I still have a really long way to go, but I am on the right track.  

At the YMCA Peter swam and met his personal goal, and I walked on the treadmill for 25 minutes and then finished on a bicycle for a little over 10 minutes.  We both decided to have a lazy day after our YMCA visit so after a few quick household chores Peter spent some time playing his video games and I spent some time reading and writing.  

For lunch I ate some of the leftover cauliflower mac-n-cheese dish. I had some snacks throughout the afternoon, some almonds and a cheese stick. At dinner I made myself some cauliflower rice and some shrimp that I pan-fried in butter. I am trying to make sure that I have enough fat in my diet. 

I was really craving something to munch on in the evening. I tried a cheese stick, but it just didn’t work. I grabbed a handful of pecans and it was okay but I was really missing being able to crunch on a cracker or something. 

This is the time when I need to muster some extra motivation to stay on track, but I can do it.

  1. Good for you! Can you have fruit? A small apple gives the crunch and sweetness of a yummy snack. Or if protein is your goal, some jerky?

    1. Most fruit is actually pretty high in carbs so I can only have very limited amounts. That is actually the hardest part of this diet for me because I love fruit. After 1-2 months we are planning to slowly transition healthy carbs back into our diet but continue to restrict all refined sugar and process foods, especially white flour based products but for now fruit is still a no-no :(
