Day 16-
I have been surprised and quite frankly amazed at how many people have heard of or are currently doing the Keto diet. After feeling frustrated yesterday with our limited food choices so far, I have been focused on learning more about Keto recipes.
After starting my day with coffee I got busy with work and then grabbed one of my low carb nut bars for a quick breakfast snack.
Later I chopped up some leftover chicken and added 1 strip of chopped bacon, some chopped pecans for flavor & crunch, a handful of broccoli rice and some mayonnaise for a super yummy chicken salad. Peter tried it and said it was delicious. There are so many fun options to add into the food that are still Keto friendly.
I did not make it to the YMCA today. I am still averaging at least every other day, but I would like to get to the point where I am working out daily. Some days there is just too much going on and I simply run out of time. I am just not the kind of person who wakes up early to go workout and I probably never will be. One of the challenges I have in working out is that I get extremely sweaty when I workout, so I have to plan time to take a shower which means a trip to workout has to happen at least 2 hours before I need to go somewhere. So I ran out of time to get to the Y and still have time for a shower before our evening plans
In the evening we went to visit some friends. It was another important test of our Keto diet resolve. Our friends had managed to make a perfect meal for our diet; they grilled vegetables in foil packets with some delicious chicken. We had a salad and then the chicken and veggies, so I felt okay actually having two glasses of wine, feeling reasonably confident that I was still under my carb limit. Peter did break down and have a beer so he was probably over his carbs just a bit. We joked and teased with our friends that we were so glad that hadn’t planned spaghetti. It does bring up an issue for dieting – making sure friends and family know that you have a limited diet.
It is pretty incredible that we have been doing so well for 16 days now, and hopefully the scale will reflect all of our hard work.
