Our Keto Journey - Day 10

Day 10-

After a quick cup of coffee Lexi and I started the morning with a nice long walk.  Not only is it healthy exercise for me, but she really appreciates the chance to smell every single tree and bush in my little corner of Phoenix.  

I came home and did some chores, and then Peter and I had fun cooking breakfast together, although it was more like brunch to be honest. He made me a fantastic bacon and cheese omelet, he made himself a ham and chees omelet, and I sautéed some onions and added them to some pan-fried cauliflower rice. It gave us the feeling of potatoes on our plate without the carbs. 

Weekends are good for getting housework done, so we spent a few hours cleaning, and then I went out canvassing for some great local candidates. Not only am I helping our democracy but I am getting some exercise too.  

Afterward I came home and we finally made the cauliflower version of mac-n-cheese that I had been promising him.  It was delicious, but sadly it does not actually taste like macaroni.  The cheese was gooey and creamy, and we might have added a bit extra, but with only 29 total carbs in an entire head of cauliflower I could technically eat the entire pan and not be over on my daily carbs, so this is a great healthy option.  



Here is the recipe that I found online, although it says bake for 15 minutes and we found it needs at least 25 minutes to really melt well and get a slightly crispy crust on top. We just used our hand to break up the florets and that seemed to work really well. (We didn't use the mustard because Peter is severely allergic)

Cauliflower Mac N Cheese
1 large head of cauliflower chopped into florets. Cook that in microwave for about 5 minutes or until soft. Place in a 9x9 oven dish.

For the cheese sauce:
1 cup heavy cream 
2 oz cream cheese
1 cup cheddar cheese 
2 tsp spicy mustard 
2 tsp garlic powder

15 mins at 375

I have been wearing my fitbit and even with a walk in the morning and canvassing in the afternoon, I still only managed a little over 7,000 steps so I still have to increase my exercise if I want to reach the 10,000 steps every day recommended by the American Heart Association.  


Each day we are getting closer to our goals so I know its worth it, and it really helps that Peter and I are doing this together. Having support at home really does make all the difference for me, it gives me the reinforcement I need to stick with it.
