Yes! Costco for the win! While picking up some almonds and pecans I found these amazing Parmesan Cheese Crisps. They have only one carb per serving, so when I have that need for something to crunch I can grab a few of these.
Almost 2 weeks into our diet and we are still doing well. It has surprised me how easy it has actually been to stay on our diet. Buying some of the Keto ‘cheater foods’ like the crisps has helped.
I started my day off with a Starbucks ‘Keto’ coffee (2 shots of sugar free vanilla and heavy cream). After a busy morning I came home and had some tuna for lunch. I snacked on some of the Cheese Crisps and they were great. They have a great crunch but they are a little tangy.
Peter came home and we made dinner. He cooked us both a small filet and a couple scallops and I made some oven-roasted asparagus. I wound up giving my scallops to Peter.
After dinner I headed out to the YMCA and got on the treadmill for just over 40 minutes. My ankle was getting sore, but I really wanted to finish a full 40 minutes. After working out I stepped on the scale. I know that I had said I would only weigh myself once a week, but I was curious how I was doing and I am happy to report that I lost another pound, so that’s 8 pounds total in the two weeks. It is really exciting to see that little weight bar move further to the left. I still have a long way to go but I am feeling really encouraged by my results so far.
