Day 17-
I started the day with some coffee and I grabbed a quick Atkins bar because I was late to a meeting.
After I got home I made myself some zucchini with Parmesan. It is super easy, just slice the zucchini and toss with some olive oil and spices, then top with some Parmesan and bake for about 10 minutes. They are excellent.
Happy to report we made it to the YMCA today, I have been able to maintain at least every other day since starting the diet. I am sure that is part of why I am doing well losing weight, and the super exciting news is that I have lost even more. So far I have lost about 12 pounds total! That’s a really great start but we have a long way to go.
Later in the afternoon we went over to a party to celebrate a friend’s graduation. Once again we had to be careful to make good #Keto choices. They had yummy shredded pork and several big bowls of potato salad, macaroni salad and cole slaw, most of which we couldn’t have. Choosing to have some pork without the bun was a simple way to keep Keto.
After leaving the party we splurged again on some cauliflower crust pizza and I even had a beer. Miller Lite has only 3.2 carbs and sometimes you just need a beer with your pizza.
It is really encouraging to see such incredible results for all of our hard work; it helps give us the motivation to keep working hard and making good choices.
